Why do pan handles stay cooler?

Short answer

Many pan handles are designed to slow the flow of heat from the hot pan to the place where you hold them. The material, the handle’s length and thickness, its connection to the pan, and its distance from the heat source all matter.

Heat from a pan on the stove gradually travels from the hot body into its handle. A material that conducts heat slowly, or a handle that is long and keeps your hand away from the heat, takes longer to warm at the gripping point. That is why the pan can be hot while the end of the handle feels much cooler.

What does it mean for heat to travel?

Heat energy moves from a hotter region toward a cooler one. In a solid, conduction happens as the motion of neighboring atoms and molecules passes through the material.

Materials differ in how easily they conduct heat. Metals also differ from one another, while materials such as wood and air conduct heat less readily. Some handles use materials or parts that make it harder for heat to reach the hand.

Why do shape and length matter?

When heat travels through a longer path or a narrower connection, less heat tends to pass in the same amount of time. A handle can therefore be shaped so that the hand is farther from the pan and the connection limits how quickly heat reaches it.

Heat leaving the handle into the surrounding air also affects how quickly its temperature rises. This does not mean that the handle is actively refrigerated. Given enough time, heat spreads through the handle.

A common misunderstanding

“The handle stays cool, so it is always safe to hold bare-handed” is not correct. A metal handle can become hot during prolonged heating. It can also heat quickly if a flame reaches it or if the pan is used in an oven.

A handle’s temperature depends on its material and shape as well as the heat level, cooking time, burner size, handle position, and the product’s use conditions. Follow the cookware instructions, use a dry thick cloth or mitt when needed, and keep the handle from pointing over the burner or beyond the edge of the stove.
