Why does popcorn pop?

The short answer

Heating a popcorn kernel turns its moisture into steam. Pressure breaks the shell and expands the soft starch inside.

How it works

The shell must be strong and the kernel must contain enough moisture. A kernel that is too dry may not build enough pressure to pop.

A familiar example

The white part is starch that expanded like foam and then set as it cooled.
